I thought I would start out with my all time favorite cookie, Oatmeal Scotchies. They start with a simple but delicious oatmeal cookie and turn amazing when butterscotch chips are added.
I have been making theses since I was a little girl. I would always use the recipe that came on the NESTLÉ® butterscotch chips package but come to find out this is NOT the recipe to use for the perfect cookie. The key is to actually use a version of the recipe on the Quaker oatmeal container, with a few adjustments, and you’ll get the perfect cookie every time!
The first, and most important step in my opinion, is to cream the butter and sugars. Mix on medium speed for a few minutes, or until creamy and the consistency of frosting.
Then add in your vanilla and one egg at a time and continue to beat until well mixed. About 1 minute.
In a large bowl, wisk together flour, baking soda, and salt. Slowly add these dry ingredients to the wet ingredients stoping to scrape the bowl about every minute until they are completely mixed together.
Add oats one cup at a time and continue to mix until well integrated.
The last addition is to mix the entire package of butterscotch chips and your dough is complete!
For perfectly round and consistent cookies always use a cookie scoop and place scoops of dough on ungreased cookie sheet or a Silpat.
Bake 8 or 9 minutes or until the cookies are just starting to turn a light golden brown.
Let cool on the pan for about 1 minute before moving to a cooling rack.
Oatmeal Scotchies

Ingredients
- 1/2 Cup Butter
- 6 Tablespoons Butter
- 3/4 Cup Brown sugar Packed
- 1/2 Cup Granulated sugar
- 1 Teaspoon Vanilla
- 2 Eggs
- 1 1/2 Cup All-purpose flour
- 1 Teaspoon Baking soda
- 1/2 Teaspoon Salt
- 3 Cups Old fashioned oats
- 1 Package Butterscotch chips
Instructions
Preheat oven to 350
Cream butter and sugars on medium speed about 2 minutes or until creamy
- Add vanilla and eggs one at a time. Mix 1 minute.
- In a large bowl, wisk together flour, baking soda, and salt.
- Slowly add dry ingredients to the wet ingredients, scrapping the bowl about every minute until they are completely mixed together.
- Add oats one cup at a time and continue to mix until well integrated.
Add entire package of butterscotch chips and stir until just mixed in.
Bake at 350 for 8 to 9 minutes (or until cookies are just turning a light golden brown).
