For some reason I can never eat all the bananas I buy. I am always looking for different ways to use them in recipes because you can only bake and eat so much plain banana bread. I’ve made chocolate banana bread before and thought this time I would make chocolate banana muffins for an easy grab-and-go treat. Sometimes ordinary muffins need a little something extra, so for these I swirled in a little bit of melted peanut butter for some extra flavor.
I always start any recipe that uses bananas, by mashing the bananas. You always want your mashed bananas to sit a little and have a chance to “liquefy” as much as they can before mixing them into your dry ingredients.
While the mashed bananas sit, you can gather and combine all your dry ingredients. Your flour, cocoa powder, granulated sugar, brown sugar, baking soda, baking powder, and salt just need a quick whisk and they are ready to go.
I always use Hershey’s® Special Dark cocoa powder in my baking. It adds so much deep flavor and great dark chocolate color to your baked goods.
Add eggs, vanilla, oil, and milk to your mashed bananas and mix together until combined.
Slowly mix your dry ingredients into your banana ingredient mixture. For this recipe, it does not need to be super mixed. Make sure you are mixing all ingredients until they are just combined. This will make for soft, moist muffins. Add chocolate chips to the batter. You can save a few to sprinkle on the top if you would like to as well. I like to sprinkle a few peanut butter chips on my muffins as well.
Pour your batter into muffin liners until they are 3/4 full.
You can now heat your peanut butter in a small dish for about 30 seconds or until it is pretty thin and easy to stir. Then spoon the melted peanut butter into your 3/4 full muffin liners.
Take a knife and gently circle the peanut butter into your batter until you are satisfied with the swirl effect.
Bake your muffins at 350 for about 15 minutes or until a toothpick comes out clean. Your chocolate banana muffins are ready to eat!
