Two of my favorite treats growing up have always been Rice Krispie Treats and Muddy Buddies (which are Rice Chex cereal mixed with peanut butter and chocolate and then tossed in powdered sugar). So what could be better than combining the two to make a super dessert. Muddy Buddy Bars are the perfect combination of marshmallow, peanut butter, and chocolate goodness and then doused in a bowl of powdered sugar. Muddy Buddy Bars are so easy and make the perfect quick treat to whip up on a time crunch.
You start your Muddy Buddy Bars by melting the butter, peanut butter and chocolate chips together for 30 seconds in the microwave in a large microwave safe bowl. If they need a little more heating to be completely melted and smooth, just make sure to heat it in small increments to make sure they are not over heated and burn.
Then add the marshmallows to the heated mixture and heat for another minute or until mixture is completely smooth.
Add the 1 Teaspoon of Cocoa powder and slowly mix it in with a spatula. I always use Hershey’s Special Dark Cocoa powder for the best flavor.
You can now mix in your Rice Krispie cereal, adding 1 cup of Krispies at a time.
Spray a 9×9 baking dish and add your Rice Krispie mixture. Firmly press it down into the dish and cut into bars. I cut mine into 12 equal sized bars.
Place powdered sugar in a small bowl and toss the bars in the powdered sugar, completely covering every side of the bar.
Your Muddy Buddy Bars are now complete and ready to plate and enjoy!
