This strawberry crumble recipe is SO easy and SO fresh! I always love baking with fresh fruit and my go-to is usually strawberries because for some reason they are always the fruit that ends up having a great sale or a “BOGO” package deal. So of course I load up and then I have to find some way to use them all up. And what better way then to make a dessert!

 

 

Start your strawberry crumble by beginning with the filling. The first thing you want to do is wash up the strawberries and set them out to dry while you gather the rest of your ingredients. Slice the strawberries and put them in a small bowl. Add 1/3 cup of sugar and 2 T of corn starch, then mix gently (as to not smash the strawberries into mush) and set the bowl aside.

For the crust/crumble, you combine the flour, 1/2 cup of white sugar, brown sugar, baking powder and salt in a medium bowl. These ingredients just need a quick wisk before adding in the egg and vanilla.

Take your stick of butter and cut it up into about 10 small cubes and add it to your flour mixture. Using a pastry cutter (or fork if you don’t have a pastry cutter), mash the butter cubes into the flour mixture until it has a crumbly texture. The end result will be pretty dry with a lot of loose crumbles.

Pour and press down about half of the crumble mixture into your prepared baking dish. You are then ready to add your delicious strawberries. Evenly distribute them over the pressed crumble so that most of the crumble is toped with fruit.

Add the rest of the topping to your dessert and your strawberry crumble is ready for the oven. It’s that easy!

Bake at 375 for about 40 minutes or until the crumble topping starts to turn a golden brown.

Ingredients

For the crust and topping:

  • 1 1/2 Cup All purpose flour
  • 1/2 Teaspoon Baking powder
  • 1/4 Teaspoon Salt
  • 1 Teaspoon Vanilla
  • 1/2 Cup White sugar
  • 2 Tablespoons Brown sugar
  • 1 Egg
  • 1/2 Cup Butter

For the filling:

  • 1 3/4 Cup Strawberries
  • 1/3 Cup White Sugar
  • 2 Teaspoon Cornstarch

Instructions

  1. Preheat oven to 375

  2. Spray 8x8 pan/dish with cooking spray

  3. Wash and slice strawberries and place them in a bowl 

  4. Add 1/3 cup of white sugar and cornstarch to the strawberries, gently mix together and set aside

  5. In a medium bowl, mix flour, 1/2 cup of white sugar, brown sugar, baking powder, and salt

  6. Add egg and vanilla

  7. Chop the butter into small pieces and add it to the mixture

  8. Using a fork or pastry cutter cut into the combined ingredients. Mixture will be crumbly

  9. Pour half of the crumbles into the bottom of the prepared dish and press down evenly so it is packed 

  10. Pour in the strawberries

  11. Top with the remaining crumbles

  12. Bake for about 40 minutes or until the top crumbles are a golden brown
